Milk is a natural source of protein, but do you know that milk is also categorised on the basis of the protein it contains? The primary group of cow’s milk protein is casein and there are two major casein that are A1 and A2 that make up to 30% of the milk. Therefore milk that has A1 beta casein is A1 milk and A2 beta casein is A2 milk. Protein in both the milks has 209 amino acids. They have different genetic variants differ by one amino acid that is 67th amino acid in the chain. A1 has histamine amino acid and A2 milk has praline amino acid in that place.
Most of the dairy herds in Asia and Africa produce milk rich in A2 beta casein. A2 protein milk is usually produced by DESI COWS and also known as desi cow milk. There are almost 37 breeds of cows in India and all of them produce A2 rich milk. Our Indian breeds such as Gir, Sahiwal, Kankrej, Rathi and Hariana are best when it comes to giving us high-quality A2 milk. While cow’s milk and A2 are used interchangeably, it is relevant to note that all buffalo milk is A2. Buffalo milk also contains less “problematic cholesterol” than cow milk does, even though the latter has found favour in the recent past due to lower fat content.
Ghee is a very good source of pure fat but it also has some amount of protein. Ghee made from A2 milk is rich in good protein and known as A2 ghee.. A2 ghee is made from the milk with higher contain of A2 beta casein protein in it. Native Indian cows, goats, camels, sheep and buffalos produce milk that has this type of protein. A2 cow ghee is purely made from milk extracts without using any other ingredient, additives or chemicals. It is yellowish in colour, grainy in texture and has a beautiful aromatic smell .A2 ghee is good for bones, builds immunity and helps to convert food into energy as it is also rich in vitamins such vitamin A, D and vitamin B12. It also has high nutritional values and it contains iron, sodium and omega fatty acid which provides many health benefits as well. Also as it is made from A2 milk it is very easily digestible by the body and A2 ghee is amazing for mental growth too. It is almost double the cost of the regular ghee available in the market but it’s totally worth it.
