Ghee is the purest form of milk with lots of good fat and aromatic smell. Ghee is easily available in the market but its purity is questionable sometimes. A2 ghee is considered to be the purest ghee or desi ghee as it is entirely made by milk extracts without adding preservatives and chemicals. But A2 ghee is quite expensive than the regular ghee available in the market, but this expense is worth it. It is stated in the ancient Indian texts in sanskrit “ ऋण कृत्वा घृतं पीबेत”which means live life and have ghee even if you have to take loan. So this is how important ghee has been in Indian culture from ancient times.
The ghee prepared commercially is made from the milk of cow breeds like jersey and brown swiss as they produce around 30ltr of milk per day. This milk is rich in A1 beta casein and also the cream it yields is very thick hence produces a good amount of ghee and sold at cheaper rates in the market. On the other hand A2 ghee is pure Desi ghee which is made from the milk of the desi cows that produce only 2-12ltrs of milk per day. Also the cream it generates is very thin hence ghee that is obtained is also very small in amount. It needs almost 35ltrs of milk to produce just 1ltr of ghee. Therefore there should be no doubt why A2 ghee is more expensive than the regular ghee.
Another most important reason why A2 ghee is costly is that it possesses plenty of health benefits as it is very rich in vitamins, omega fatty acids, sodium and many other nutrients which are needed by the body. And also it does not contain any sort of chemicals, preservatives and impurities therefore have almost 0 side effects on the human body. This would be nothing wrong if I would say that desi ghee or A2 ghee is one of the greatest gifts of India to the world. It is much better to spend on expensive A2 ghee than spending on expensive medical treatments.
